Soraya Haddad
Soraya survived the structural collapse of her family home during the Lebanese Civil War, losing her parents at a young age. To keep her younger siblings fed and hopeful, she learned to bake flatbreads and roll vine leaves using whatever meager ingredients she could forage. When she later migrated to Australia as a single mother, she carried those survival recipes into a bustling bakery stall. Her specialty, a spiced lamb and pomegranate flatbread, is infused with the memory of her resilience, tasting like safety, survival, and unconditional love.
